24 Carrot Magic Cake! No Bake (vegan!)
Cake –
2 1/2 cups or 1 small bag Baby Carrots finely shredded
2 cups Oat Flour
1 cup pitted Medjool Dates
1/2 cup Crushed Pineapple
1/4 cup chopped Walnuts
1 teaspoon Cinnamon
1 teaspoon ground Ginger
1/4 teaspoon Allspice
Pinch of Sea Salt

Icing –
1 cup Canned Full Fat Coconut Milk
3 Tablespoons Coconut Oil
2 1/2 Tablespoons Arrowroot Powder
1/4 cup sweetener (we used Lakanto Monkfruit)
1 cup Raw Cashews
1 Tablespoon Vanilla Extract

  2. Looks great!! 👍 I love that you used oat flour, because that’s my main squeeze now days. I think I’d substitute cinnamon applesauce in place of the pineapple. I like fresh pineapples, but I don’t care for it in desserts. This makes me wonder how good it would be to cook and purée the carrots, and then bake this. I always used puréed carrots in my regular carrot cake recipe, so with oat flour and applesauce instead of an egg, I could totally make something super close! Thanks for the idea ladies! Great job!! 🌷🤗🦋
