How to make Vegan Gluten Free Chocolate Cup Cakes

DOUBLE CHOCOLATE CUPCAKES | VEGAN & GLUTEN FREE .
Treat time ! These cupcakes are a favourite of my two boys. To pimp up the cupcakes- I add two squares of chocolate into the middle of the cake batter prior to baking. If you eat them warm – the cakes are supper fluffy with a rich gooey chocolate inside. If the cakes have cooled down you get a fluffy outside with a solid chocolate centre.
The frosting is made with cannellini beans which gives a super creamy texture. Their lack of flavor allows the cacao taste to shine through. ..

So you would think that these are loaded with calories right ? Thanks to the use of Natvia (a stevia sweetener) these are only 128 calories each !

INGREDIENTS (10 cup cakes)…
▪️1 cup Gluten Free flour …
▪️1/3 cup Natvia natural sweetener (or sweetener of your choice)…
▪️1/3 cup unsweetened cacao …
▪️1/2 tsp baking powder …
▪️1/2 tsp vanilla powder …
▪️1/2 tsp baking soda …
▪️1 tbsp apple cider vinegar …
▪️1/3 cup apple sauce …
▪️1 cup almond milk …
▪️100 g Vegan chocolate, cut into squares
METHOD
Pre-heat the oven 180 C /350 F.
Prepare 10 cupcake papers in a cupcake tin.
In a medium bowl, add the flour, sweetener, cacao, baking powder,
vanilla powder, baking soda, apple vinegar, apple sauce and almond
milk. Whisk to combine together until the batter is smooth.
Place the batter into the prepared cupcake papers and add the squares
of vegan chocolate in the centre and push it down into the middle.
Bake for 15 minutes or until a tooth pick comes out clean.
Let it cool before adding the frosting…

FROSTING INGREDIENTS …
▪️1 cup cannellini beans, rinsed …
▪️2 tbsp unsweetened cacao …
▪️2 ½ tbsp natvia icing natural sweetener. ▪️Orange Juice – 1 orange …
▪️1/2 tsp xanthan gum
METHOD
In a blender, add cannellini beans, cacao, xanthan gum and natural sweetener.
Blend until really smooth.
Transfer the frosting into a piping bag.
Pipe the frosting on top of the cupcakes. Decorate with additional squares of vegan chocolate and edible flowers. …
