If you didn’t know, October is National Cookie Month!!! I’ll be doing a new vegan cookie recipe every Monday during this month. Today, I’ll be making a recipe for Vegan Pumpkin Pie Cookies. These vegan cookies take all of the best parts of the pumpkin and make it hand held. This is also a collab with Noreen’s Kitchen where she’ll be showing you how to make an Apple Pie Inspired cookie. All-Purpose Flour | 2 1/4 Cups
Baking Soda | 1/2 teaspoon
Baking Powder | 1 teaspoon
Ground Cinnamon | 1 teaspoon
Sea Salt | 1 teaspoon
Coconut Sugar | 1 1/2 Cups
Homemade Pumpkin Puree | 1/4 Cup ()
Corn Starch | 1 Tablespoon
Vegan Butter | 6 Tablespoons, melted
Coconut Oil | 1/3 Cup, melted
Vanilla Extract | 2 teaspoons
Chopped Walnuts | 1/4 Cup, optional

  1. oh YUM! the dough looks similar to a gingerbread! I can almost smell the
    pumpkin and cinnamon (probably cause I’m baking pumpkin and cinnamon 😉 )
    Can’t wait for the rest of cookie month!
