Prince Harry and Meghan’s Royal Wedding Cake Recipe (Lemon Elderflower Cake Vegan and Gluten Free)

The Royal Wedding of Prince Harry and Meghan Markle is upon us, and celebrations are due! At Dolled Up Desserts, we have re-created our version of the Royal Wedding Cake that everyone can enjoy (because as always, its gluten free and vegan #inclusivedessert). The official cake is a lemon elderflower cake with a swiss meringue butter cream (how divine!). In this video we show you how to capture the bright flavours of spring and royal romance with our vegan lemon swiss meringue buttercream, layers of moist gluten free elderflower cake made from our Cloud Nine Vanilla Cake Mix, and fresh elder berries and blue berries. Don’t forget the official wedding flowers for the top: white roses and pink peonies!

INGREDIENTS (for the use of one baking mix, yielding a 3 layer 6″ cake)

a) Cake
– 1 Dolled Up Desserts Premium Cloud Nine Vanilla Cake Mix

Buy it here, shipped across North America:

– ¾ cup sunflower/canola oil
– 3/4 cup non dairy milk (preferably soy)
– Juice of 1 ½ lemons
– Zest of 1 ½ lemons
– ½ cup elderflower cordial

b) Icing
– 375g non-dairy butter, room temperature (Preferably Earth Balance, must be solid at room temperature)
– 330g icing sugar
– 15g soy isolate protein
– 150g non dairy milk
– Lemon flavour: 1 tbsp of lemon extract or lemon emulsion; 10 drops of food grade edible lemon essential oil

c) Fanciness
– Pint of blueberries and blackberries
– One peony and white rose
