Super soft cakey kind of scones that shaped like thick cookies. I am down for it 🙋🏻
1 cup flour
1/2 tbsp baking powder
1/4 cup cinnamon sugar (granulated sugar with a dash or cinnamon)
pinch of salt
3 tbsp margarine / vegan butter
flax egg (1 tbsp flaxseed + 3 tbsp water, let sit for 10 minutes)
1/4 cup + 2 tbsp plant based milk
In a bowl combine flour, baking powder, sugar. Add in margarine and mix until there is no large lumps. In another bowl pour in the milk to flax egg and mix well.
Combine wet ingredients to the dry. Add in chocolate chunks (the more, the better!) Mix well.
Transfer the dough to floured surface then sprinkle some more on the top. Flatten the dough according to how thick you want your scones will be. Using floured cookie cutter, cut out the dough.
Place it into baking tray. Remove excess flour on the scones. Bake for around 20-25 minutes (190C). Let cool a little bit then enjoy it warm or room temperature.
